<h1>Ingredients:</h1>
<ol>
<li>1 cup all-purpose flour (maida)</li>
<li>1/4 cup semolina (sooji)</li>
<li>2 tablespoons ghee or oil</li>
<li>1/4 teaspoon baking soda</li>
<li>1/4 teaspoon salt</li>
<li>Water, as needed, to make the dough</li>
<li>For the filling:</li>
<li>1 cup yellow moong dal, soaked for 2 hours</li>
<li>1 teaspoon cumin seeds</li>
<li>1 teaspoon fennel seeds</li>
<li>1/2 teaspoon turmeric powder</li>
<li>1/2 teaspoon red chili powder</li>
<li>1/2 teaspoon garam masala</li>
<li>1 tablespoon grated ginger</li>
<li>2 tablespoons chopped coriander leaves</li>
<li>Salt to taste</li>
<li>Oil for deep frying</li>

<h1>Procedure:</h1>
<ol>
<li>For the dough, mix all-purpose flour, semolina, ghee or oil, baking soda, and salt in a bowl.</li>
<li>Add water gradually and knead into a firm yet smooth dough. Cover and let it rest for 15-20 minutes.</li>
<li>For the filling, grind the soaked moong dal into a coarse paste without adding water.</li>
<li>Heat oil in a pan. Add cumin seeds, fennel seeds, and grated ginger. Sauté until fragrant.</li>
<li>Add the moong dal paste, turmeric powder, red chili powder, garam masala, and salt. Cook until the mixture thickens, stirring continuously.</li>
<li>Remove from heat and let the filling cool. Add chopped coriander leaves.</li>
<li>Divide the dough into small portions. Roll each portion into a small disc and place a spoonful of the moong dal filling in the center.</li>
<li>Seal the edges to form a ball. Flatten slightly with your hands to form a disc-shaped kachori.</li>
<li>Heat oil for deep frying. Fry the kachoris until they turn golden brown and crisp.</li>
<li>Remove the kachoris from the oil and place them on paper towels to absorb excess oil.</li>
<li>Serve the kachoris hot with mint chutney or tamarind sauce.</li>
