<h1>Ingredients:</h1>
<ol>
<li>1 cup chickpea flour (besan)</li>
<li>1/2 cup finely chopped onions</li>
<li>1/4 cup finely chopped spinach (optional)</li>
<li>1/4 cup finely chopped potatoes</li>
<li>1 teaspoon ginger-garlic paste</li>
<li>1/2 teaspoon cumin seeds</li>
<li>1/2 teaspoon red chili powder</li>
<li>1/4 teaspoon turmeric powder</li>
<li>1/2 teaspoon garam masala</li>
<li>1/4 teaspoon baking soda (optional, for extra crispiness)</li>
<li>Salt to taste</li>
<li>Water, as needed, to make the batter</li>
<li>Oil for deep frying</li>

<h1>Procedure:</h1>
<ol>
<li>In a mixing bowl, combine chickpea flour, chopped onions, chopped spinach (if using), chopped potatoes, ginger-garlic paste, cumin seeds, red chili powder, turmeric powder, garam masala, baking soda (if using), and salt.</li>
<li>Add water gradually to form a thick batter. Ensure there are no lumps in the batter.</li>
<li>Heat oil in a deep frying pan over medium heat.</li>
<li>Once the oil is hot, drop small portions of the batter into the oil using a spoon or your hands.</li>
<li>Fry the pakodis until they turn golden brown and crispy, turning them occasionally for even cooking.</li>
<li>Remove the pakodis from the oil and place them on paper towels to absorb excess oil.</li>
<li>Serve the pakodis hot with mint chutney or tomato ketchup.</li>
