On Windows 10 version 1903, with the new light mode activated, the system tray icon becomes nearly invisible.

This is a real problem. Why so long? Google's white icon for Backup & Sync icon is inexcusable - see how Microsoft fixed the OneDrive tray icon. But with new Windows 10 computers growing and growing, and the major preferences to go back to light mode, I've been upvoting this wherever I can find it.
Why and when will Microsoft get a fix? Either apply a filter to tray icons, or offer customization for that annoying gray taskbar in light mode. There are many developers who have white tray icons in their apps which have always worked fine in Microsoft desktop themes.
