Debian has a bigger user base and is probably more secure. For some hand-waving information with a list of pros and cons see Choosing a secure Docker base image.

Another reason to switch is dotnet/vscode-csharp#3621 even though we could work around that as explained in dotnet/vscode-csharp#3621 (comment)
