1 bunch cilantro, stems removed
4 - 6 coarsely chopped scallions
3 green chilis (Thai or serrano)
4 - 6 cloves garlic
1 tsp sea salt
1/4 c olive oil
1/4 c crushed pistachios
1 tbsp cumin seeds
Pulse cilantro, chilis, garlic, & salt in a blender. Transfer to a bowl & set aside.
Heat oil and toast cumin seeds until fragrant. Add pistachios and mix into cilantro paste.
Awesome with most varieties of protein.
