I know you can search for tags with the normal search shortcut.
However, I'd like to be able to open a tag with a shortcut the same way you can click it in the side panel.

This is a good point! I have been thinking about how to extend the search bar into some Alfred-style utility bar. Could you give us more details about how you want to use the search bar to open the tag?
When a search term matches a tag, give the tag preference in the list of results. Use something like color coding to differentiate between tags and gists. When searching for a Gist, the user can make the search term more specific to avoid matching any tags.
When the user starts his search term with a '#' assume he wants to open a tag. Requires extra typing though.
Come up with a new key combination for an "open tag" shortcut. Requires memorizing an extra shortcut though.
