There are some failures in the documentation section that will have to be addressed.

Updating Sphinx from 4.2.0 to 7.2.6 requires to update lots of other dependencies... and then also fix errors in the documentation.

ok. took the chance to update all doc dependencies as many of them required an update for sphinx 7 ... and also updated the Python version in the Makefile that is only used by the docs workflow to match the rtd Python version.
