Issue being fixed or feature implemented

The deprecated grpc dependency needed updating to @grpc/grpc-js for future support and to speed up builds in CI.

What was done?

• Remove obsolete grpc
• Add @grpc/grpc-js
• Update and dedupe deps

How Has This Been Tested?

• With npm run test
• In CI
