chore: add additional saml scopes and mappers for gitlab

Description

Add additional saml client scopes and protocol mappers. The specific mappers added here were discovered during gitlab integration but can be reused by other apps as needed. These mappers allow GitLab to display the user's full name and determine access based on the user's groups.

I also added descriptions to all "mapper" client scopes to explain what they do. The descriptions are visible in the client scopes list in the keycloak admin ui.
