This makes it so that the 2-step process (release-backend-crates, release-uniffi) replaces the placeholders correctly. Step 1: Mark the backend crates version and add the new header with NEW placeholders. Step 2: Add the uniffi version and replace the NEW placeholders with those expected in Step 1.

This includes some fixes I had to make so the release process works smoothly.
