Updates the Amplitude metadata to the metadata of the upcoming Amplitude runtime. This was done by fetching it with subxt from a local instance of the Amplitude chain (set up with zombienet) compiled for this commit.
Also adds the metadata of the current Foucoco runtime in .json format. This should have been added in this PR instead. The .json representation of the metadata makes it easier to identify the changes from one metadata version to another.
Closes #461.
